A simple and flavorful roasted vegetables recipe that turns fresh veggies into tender, caramelized bites.

  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried herbs (such as thyme or rosemary)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Chop the vegetables into bite-sized pieces.
  3. Season the vegetables with olive oil, salt, black pepper, and dried herbs in a large bowl.
  4. Arrange the seasoned vegetables in a single layer on a baking sheet.
  5. Roast for 20-25 minutes, stirring halfway through.

Notes

Don’t overcrowd the baking sheet for even roasting. Feel free to substitute vegetables and experiment with different herbs!
