A vibrant and nourishing Salmon Buddha Bowl featuring cooked quinoa, fresh vegetables, and perfectly sautéed salmon.

Ingredients

  • 1 cup cooked quinoa
  • 4 oz salmon fillet
  • 1 cup baby spinach
  • 1/2 cucumber, sliced
  • 1/2 avocado, sliced
  • 1/4 cup carrots, shredded
  • 2 tablespoons sesame seeds
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the quinoa according to package instructions. Rinse it under cold water, then combine it with water in a pot. Bring it to a boil, reduce to a simmer, cover, and let it cook until fluffy.
  2. Sauté the salmon by heating olive oil in a pan over medium heat. Season the fillet with salt and pepper, then place it in the pan. Cook for about 4-5 minutes on each side until golden and cooked through.
  3. Layer the ingredients in a large bowl. Start with the quinoa at the bottom, followed by baby spinach, sliced cucumber, avocado, and shredded carrots.
  4. Add the salmon on top of the veggies to showcase its flavor against the fresh greens.
  5. Garnish with sesame seeds and drizzle with soy sauce to finish your Buddha bowl.

Notes

Feel free to swap in your favorite veggies or proteins. Leftovers can be stored in an airtight container for up to 2 days.
