Salmon Orzo

A beautiful and flavorful dish combining salmon, orzo pasta, and vibrant vegetables, perfect for any occasion.

Ingredients

  • 2 salmon fillets
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in the orzo and let it cook for a couple of minutes to toast slightly.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat to a simmer, cover the pan, and cook for about 10 minutes, or until the orzo is al dente.
  6. Place the salmon fillets on top of the orzo, add the halved cherry tomatoes and spinach, and season with salt and pepper.
  7. Cover the pan again and cook for another 5-7 minutes, or until the salmon is cooked through and flakes easily.
  8. Serve with fresh lemon wedges on the side.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water or broth.
