  1. Prepare Your Ingredients: Begin by gathering and prepping your ingredients; set aside the chicken breasts. Slice the onion and finely chop the garlic, rosemary, thyme, and parsley.
  2. Make the Herb-Infused Marinade: In a large bowl, whisk together the olive oil, minced garlic, rosemary, thyme, parsley, salt, black pepper, paprika, lemon juice, and soy sauce (if using). Mix thoroughly to create a fragrant herb-infused marinade.
  3. Marinate the Chicken: Add the chicken breasts to the bowl and ensure they are fully coated with the marinade. For the best flavor, allow them to marinate for at least 30 minutes, or even better, overnight in the refrigerator.
  4. Layer the Onion: In the crockpot, layer the sliced onion at the bottom. This will become a sweet, aromatic base for your chicken.
