A comforting skillet meal featuring smoked sausage, honey, and BBQ sauce, served over fluffy rice.

Ingredients

  • 1 lb smoked sausage
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/4 cup honey
  • 1/4 cup BBQ sauce
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 small onion, diced
  • 1 bell pepper, diced

Instructions

  1. In a large skillet over medium heat, melt 2 tablespoons of butter. Add sliced sausage and cook until browned, about 5-7 minutes. Once beautifully seared, set aside on a plate.
  2. In the same skillet, melt the remaining butter. Then add the diced onion and bell pepper, sautéing until softened for about 3-4 minutes.
  3. Stir in the minced garlic and a sprinkle of smoked paprika, cooking for an additional minute to release those delicious aromas.
  4. Add the long-grain rice to the skillet, cooking for 2 minutes to lightly toast it.
  5. Pour in the chicken broth, honey, and BBQ sauce; stir well to combine. Bring the mixture to a rapid boil.
  6. Reduce the heat to low, cover the skillet, and let it simmer for 15-18 minutes until the rice is tender.
  7. Return the sausage to the skillet and mix well, heating through for about 2-3 minutes. Season to taste, and garnish with parsley before serving.

Notes

Pairs well with a side salad or cornbread. Store leftovers in an airtight container for up to 3 days.
