Delight in these cheesy and colorful sheet pan quesadillas, perfect for family dinners or gatherings. Easy to customize and simple to make!

Ingredients

  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup cooked chicken or beans (optional)
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 cup corn (frozen or canned)
  • 1 teaspoon taco seasoning
  • Sour cream and salsa for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Arrange 4 flour tortillas in a single layer on a sheet pan.
  3. Sprinkle half of the shredded cheese evenly over the tortillas.
  4. Layer the cooked chicken or beans (if using), diced bell pepper, onion, and corn on top of the cheese.
  5. Season with remaining cheese and taco seasoning.
  6. Top with the remaining tortillas.
  7. Bake for about 15-20 minutes or until golden and bubbly.
  8. Slice and serve with sour cream and salsa.

Notes

For extra crunch, brush olive oil on the top tortillas before baking. Customize the fillings based on your preferences.
