A simple and satisfying sheet pan dinner featuring juicy sausage and vibrant roasted vegetables.

Ingredients

  • 1 pound sausage (Italian or your choice)
  • 2 cups mixed vegetables (such as bell peppers, zucchini, and onion)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the sausage and mixed vegetables on a large sheet pan.
  3. Drizzle with olive oil and sprinkle with garlic powder, dried oregano, salt, and pepper.
  4. Toss all the ingredients until well-coated.
  5. Spread the mixture in an even layer on the sheet pan.
  6. Bake for 25-30 minutes, or until the sausage is cooked through and veggies are tender.
  7. Garnish with fresh parsley before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for 3-4 days or frozen for up to 3 months.
