A simple, one-pan meal combining shrimp, potatoes, and corn with zesty flavors, perfect for summer gatherings.

Ingredients

  • 1 pound shrimp, deveined and tails removed
  • 1 pound baby potatoes, halved
  • 1 pound corn on the cob, cut into pieces
  • 1 tablespoon olive oil
  • 2 teaspoons Old Bay seasoning
  • Salt and pepper to taste
  • Lemon wedges for serving
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the shrimp, halved baby potatoes, and corn in a large bowl.
  3. Drizzle the olive oil, then sprinkle Old Bay seasoning, salt, and pepper. Toss everything to coat.
  4. Spread the mixture in a single layer on a sheet pan.
  5. Bake for 20-25 minutes until shrimp are pink and potatoes are tender.
  6. Finish with lemon wedges and chopped parsley before serving.
