A quick and easy version of the classic shrimp scampi made in one pan, featuring shrimp roasted in a buttery, garlic-infused sauce.

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1 lemon, juiced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Cooked pasta or bread for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, melt the butter and mix in the minced garlic, red pepper flakes, lemon juice, chopped parsley, salt, and pepper.
  3. Add the peeled and deveined shrimp to the bowl and toss to coat evenly in the buttery mixture.
  4. Spread the shrimp mixture on a baking sheet in a single layer, making sure the shrimp are not overcrowded to ensure even cooking.
  5. Bake for 8-10 minutes, or until the shrimp are pink and opaque, indicating they are perfectly cooked.
  6. Serve the shrimp scampi over cooked pasta or alongside warm, crusty bread to soak up that delicious sauce.

Notes

For added flavor, consider adding cherry tomatoes or asparagus. Reheat leftovers gently on the stovetop.
