A quick and easy shrimp fried rice recipe that’s vibrant and customizable, made with juicy shrimp and a medley of vegetables.

Ingredients

  • 2 cups cooked rice
  • 200g shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large pan or wok over medium heat.
  2. Add the shrimp to the pan and stir-fry until they turn pink, about 2-3 minutes.
  3. Remove the cooked shrimp from the pan and set aside.
  4. Toss in the mixed vegetables and sauté until tender, about 3-4 minutes.
  5. Push the vegetables to the side of the pan and scramble the beaten eggs until cooked through.
  6. Introduce the cooked rice to the pan, pour in the soy sauce, and mix everything together.
  7. Add the cooked shrimp back into the pan and stir to combine all the ingredients.
  8. Season with salt and pepper, then garnish with chopped green onions before serving.

Notes

Use day-old rice for the best texture and don’t overcrowd the pan to ensure even cooking.
