A quick and easy Shrimp Fried Rice recipe packed with protein and vibrant veggies, perfect for dinner or a midday meal.

  • 2 cups cooked rice
  • 1 cup shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 green onions, chopped
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the shrimp to the pan and cook until they turn pink, about 2-3 minutes.
  3. Push the shrimp to one side and pour the beaten eggs onto the other side; scramble until just cooked through.
  4. Add the cooked rice and mixed vegetables to the skillet, stirring to combine.
  5. Pour in the soy sauce and sesame oil, mixing thoroughly.
  6. Add the chopped green onions, salt, and pepper, stirring for another 2-3 minutes until heated through.

Notes

Use day-old rice for the best texture. Feel free to swap in any veggies you have on hand.
