Shrimp Fried Rice

Quick and delicious shrimp fried rice, bursting with flavor and perfect for a weeknight dinner.

Ingredients

  • 2 cups cooked rice
  • 1 cup shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 tablespoons vegetable oil
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the shrimp and cook until they turn pink, about 2-3 minutes.
  3. Push the shrimp to one side of the skillet and pour in the beaten eggs. Scramble them until fully cooked.
  4. Add the cooked rice and mixed vegetables to the skillet, stirring everything together.
  5. Pour in the soy sauce and stir to combine all the ingredients, cooking for another 5 minutes.
  6. Season with salt and pepper to taste. Garnish with sliced green onions before serving.

Notes

Day-old rice works best for frying as it’s drier and less likely to become mushy. Serve with a side of crispy spring rolls or a cucumber salad.
