A quick and impressive meal that balances richness and brightness with butter, garlic, and lemon.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 4 tablespoons butter
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup white wine
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 8 ounces linguine or spaghetti
  • Parsley, chopped for garnish

Instructions

  1. Boil the Pasta: Cook linguine according to package instructions. Drain and set aside.
  2. Heat the Fat: In a large skillet, heat the butter and olive oil over medium heat.
  3. Sauté the Aromatics: Add the minced garlic and red pepper flakes; sauté for about 1 minute until fragrant.
  4. Cook the Shrimp: Add the shrimp and cook for 2-3 minutes until they turn pink.
  5. Deglaze the Skillet: Pour in the white wine and lemon juice, then season with salt and pepper. Cook for another 2 minutes.
  6. Combine with Pasta: Toss the cooked pasta with the shrimp mixture in the skillet until well combined.
  7. Garnish & Serve: Garnish with chopped parsley and serve immediately.

Notes

Shrimp Scampi is best enjoyed fresh, but can be stored in an airtight container in the fridge for up to 2 days.
