A delicious and easy-to-make Shrimp Scampi Pasta that captures the essence of coastal dining with its rich garlic butter sauce and tender shrimp.

Ingredients

  • 8 oz linguine or spaghetti
  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/4 cup white wine
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup unsalted butter
  • 2 tbsp olive oil
  • 1/4 cup parsley, chopped
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook the Pasta: Cook the linguine or spaghetti according to package instructions. Make sure to salt the water well for the best flavor. Drain and set aside.
  2. Heat the Skillet: In a large skillet, heat the olive oil and butter over medium heat until the butter melts and starts to foam.
  3. Sauté the Garlic: Add the minced garlic and sauté for about 1 minute until fragrant, making sure it doesn’t burn.
  4. Cook the Shrimp: Add the shrimp to the skillet and cook until they turn pink, about 2-3 minutes.
  5. Create the Sauce: Pour in the white wine, chicken broth, and lemon juice. Let it simmer for 2-3 minutes.
  6. Toss the Pasta: Add the cooked pasta to the skillet and toss to combine.
  7. Season to Perfection: Season with salt, pepper, and red pepper flakes if desired.
  8. Garnish and Serve: Stir in the chopped parsley and serve immediately.

Notes

Don’t overcook your shrimp! Freshly squeezed lemon juice enhances the flavor, and keeping the pasta slightly undercooked (al dente) is key.
