A flavorful and healthy vegan quinoa and black bean bowl, perfect for beginners and busy weeknights.

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 bell pepper, diced (any color you prefer)
  • 1 cup corn (frozen or fresh)
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish (optional)
  • Lime wedges, for serving

Instructions

  1. Rinse the quinoa under cold water.
  2. Combine the rinsed quinoa and vegetable broth in a medium saucepan. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes.
  3. Heat olive oil in a large skillet over medium heat. Add diced bell pepper and corn, and sauté for about 5 minutes.
  4. Add the cooked quinoa to the skillet with veggies. Toss in black beans, cumin, paprika, salt, and pepper. Stir for another 3-4 minutes.
  5. Taste the mixture and adjust seasoning. Add lime juice if desired.
  6. Garnish with fresh cilantro and serve with lime wedges.

Notes

Store leftovers in an airtight container for up to 4 days, or freeze for up to 2 months.
