A one-skillet meal featuring pasta, Cajun chicken, and a creamy pepper jack sauce, perfect for a quick weeknight dinner.

  • 12 oz penne pasta
  • 1 lb boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 bell pepper, diced (red or green)
  • 3 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 1 cup shredded pepper jack cheese
  • ½ cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet over medium heat, heat olive oil and sauté diced chicken seasoned with salt, pepper, and Cajun seasoning until cooked through, about 5-7 minutes.
  3. Add onion and bell pepper; sauté until softened, about 3-4 minutes.
  4. Stir in garlic and cook until fragrant, about 1 minute.
  5. Pour in chicken broth and heavy cream; bring to a gentle simmer.
  6. Reduce heat to low and stir in shredded pepper jack cheese until melted.
  7. Add cooked pasta to the skillet and toss until well-coated with the sauce; heat through, about 2-3 minutes.
  8. Adjust seasoning if needed, garnish with fresh parsley, and serve hot.

Notes

For added flavor, consider marinating the chicken in Cajun seasoning for 30 minutes before cooking. Fresh parsley garnishes the dish nicely.
