A savory and spicy slow cooker barbacoa made with tender beef, chipotle peppers, and a blend of spices, perfect for tacos, burritos, or rice.

Ingredients

  • 2 lbs beef chuck roast
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 23 chipotle peppers in adobo sauce
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 bay leaves
  • 1/4 cup freshly squeezed lime juice
  • 1/4 cup beef broth

Instructions

  1. Season the beef chuck roast generously with salt, black pepper, ground cumin, and dried oregano.
  2. Prepare the chopped onion and minced garlic in the bottom of your slow cooker.
  3. Layer the seasoned beef on top of the onion and garlic mixture.
  4. Make the chipotle peppers blend until smooth and pour this over the meat.
  5. Add fresh lime juice and beef broth, then gently toss everything together.
  6. Nestle the bay leaves on top of the mixture.
  7. Let it cook on low for 8 hours or high for 4 hours.
  8. Shred the beef and mix it back with the juices before serving.
  9. Serve your barbacoa in soft tortillas, burritos, or over rice.

Notes

Adjust the number of chipotle peppers based on heat preference. You can also use chicken or vegetable broth instead of beef broth.
