  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 cup diced onions
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup diced carrots
  • 1 cup diced potatoes

Instructions

  1. Layer the chicken: Place the chicken breasts into the slow cooker, letting them form the base of this hearty dish.
  2. Add flavorful broth and aromatics: Pour in the chicken broth and sprinkle the diced onions, minced garlic, paprika, thyme, salt, and pepper over the chicken.
  3. Toss in the veggies: Add in the diced carrots and potatoes on top of your seasoned chicken.
  4. Set to cook: Cover the slow cooker and set it to cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred and serve: Once cooked, shred the chicken right in the slow cooker and serve warm.
