  • 2 pounds beef chuck roast
  • 1 pound baby potatoes
  • 1/2 cup unsalted butter
  • 6 cloves garlic, minced
  • 1 onion, sliced
  • 1 cup beef broth
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

  1. Place the beef chuck roast in the slow cooker.
  2. Add the baby potatoes and sliced onion around the beef.
  3. Sauté the minced garlic in melted butter until fragrant.
  4. Combine the garlic butter and pour it over the beef and potatoes.
  5. Season with beef broth, salt, pepper, thyme, and rosemary.
  6. Slow cook on low for 8 hours.
  7. Shred the beef and serve with the potatoes.

Notes

For extra flavor, consider adding carrots or different herbs. Leftovers can be refrigerated for up to 3 days.
