A comforting slow-cooked dish that marries sweet pineapple with tender pork for a crowd-pleasing meal.

  • 2 pounds pork shoulder
  • 1 can (20 ounces) crushed pineapple in juice
  • 1 cup barbecue sauce
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. Place the pork shoulder in the slow cooker.
  2. Add the sliced onion and minced garlic over the pork.
  3. Pour the crushed pineapple with juice and barbecue sauce onto the pork.
  4. Season with salt and pepper.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Shred the pork into bite-sized pieces with two forks.
  7. Serve over cooked rice.

Notes

Garnish with chopped green onions or cilantro for added freshness.
