A hearty, slow-cooked pot roast that brings warmth and comfort to family gatherings.

Ingredients

  • 34 pounds beef chuck roast
  • 4 carrots, chopped
  • 3 potatoes, diced
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

  1. Season the beef chuck roast generously with salt, pepper, dried thyme, and rosemary.
  2. Place the seasoned roast into your slow cooker.
  3. Add the chopped carrots, diced potatoes, onion quarters, and minced garlic around the roast.
  4. Pour the beef broth and Worcestershire sauce over the roast and veggies.
  5. Cover the slow cooker and set it to cook on low for 8-10 hours.
  6. Slice the roast against the grain and serve with the vegetables and broth.

Notes

For extra flavor, brown the roast before slow cooking. Various vegetables can be added based on preference.
