A hearty and comforting slow cooker meal that combines tender chicken breasts with zesty salsa, black beans, and corn.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Prepare the chicken by placing it in the slow cooker, laid out flat.
  2. Add the salsa over the chicken, coating each piece generously.
  3. Mix in the black beans and corn.
  4. Sprinkle the taco seasoning over the mixture and stir to combine.
  5. Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
  6. Shred the chicken right in the pot with two forks and mix with the sauce.
  7. Serve with cheese if desired and garnish with fresh cilantro.

Notes

For extra zing, add lime juice before serving. Use pre-made salsa if preferred. Feel free to customize with additional veggies.
