Smashed Cucumber Salad

A crispy and refreshing salad bursting with flavor, perfect for summer gatherings.

Ingredients

  • 4 Cucumbers
  • 1 tsp Salt
  • 2 cloves Garlic, minced
  • 3 tbsp Rice vinegar
  • 2 tbsp Sesame oil
  • 1 tbsp Chili oil
  • Fresh herbs (such as cilantro or mint)
  • 1 tsp Sugar

Instructions

  1. Smash the cucumbers using the flat side of a knife or a rolling pin until they split open.
  2. Slice the smashed cucumbers into bite-sized pieces and place them in a bowl.
  3. Sprinkle salt over the cucumbers and let them sit for about 10 minutes to draw out excess water.
  4. Whisk together minced garlic, rice vinegar, sesame oil, chili oil, and sugar to create the dressing.
  5. Drain the cucumbers and add in the dressing. Toss to combine thoroughly.
  6. Add in your fresh herbs and give it a final toss. Serve chilled.

Notes

For extra crunch, use Persian cucumbers; they’re thinner-skinned and less watery.
