S’mores Brownies

Decadent brownies packed with chocolate chips and mini marshmallows, layered with graham cracker crumble for a delightful twist on classic s’mores.

Ingredients

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup mini marshmallows
  • 1 cup graham cracker crumbs

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Mix melted butter and sugar in a large bowl until smooth.
  3. Add in eggs one at a time, stirring until fully combined, then stir in vanilla extract.
  4. Combine flour, cocoa powder, baking powder, and salt in a separate bowl. Gradually add this dry mixture to the butter mixture, stirring until just combined.
  5. Fold in chocolate chips and half of the mini marshmallows into the batter.
  6. Pour half the brownie batter into the prepared dish and sprinkle with graham cracker crumbs.
  7. Spread the remaining brownie batter over the crumbs, then top with the remaining marshmallows and a few extra chocolate chips.
  8. Bake for 30-35 minutes or until a toothpick comes out with a few moist crumbs.
  9. Allow to cool in the pan before slicing into bars, then serve and enjoy!

Notes

Serve with vanilla ice cream or a drizzle of chocolate syrup for an extra treat. Store leftovers in an airtight container for up to 4 days.
