Delightful cookie bars that capture the classic flavors of s’mores without needing a campfire.

Ingredients

  • 1/2 cup Butter (softened, salted or unsalted)
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cup All-Purpose flour
  • 1/2 cup graham crackers (finely crushed, about 3.5 sheets, for the cookie dough)
  • 1/4 tsp salt
  • 3/4 tsp baking soda
  • 5 standard Hershey bars
  • 1 1/2 cup Marshmallow fluff

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper. Set it aside, anticipating the delightful aromas to come.
  2. Cream the Butters and Sugars: In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until they’re light and fluffy. This will create a lovely base for your cookie dough.
  3. Add the Egg and Vanilla: Add in the egg and vanilla extract, mixing until everything is nicely combined and smooth.
  4. Combine the Dry Ingredients: Sift in the flour, crushed graham cracker crumbs, salt, and baking soda, mixing just until the flour disappears.
  5. Layer the Cookie Dough: Press half of the dough evenly onto the prepared baking sheet, creating a flat and even layer.
  6. Chill the Dough: Remove the parchment from the pan and place the layer in the freezer for a few minutes.
  7. Prepare the Final Layer: Repeat the process with the remaining cookie dough, pressing it into the pan to form the top layer.
  8. Add the Chocolate: Place the Hershey bars over the dough, breaking them apart to fit neatly across the surface.
  9. Spread Marshmallow Fluff: Spread the marshmallow fluff generously over the chocolate, ensuring it’s evenly distributed.
  10. Finish with the Top Layer: Gently flip the chilled cookie dough layer on top of the marshmallow fluff.
  11. Bake to Perfection: Bake the cookie bars in the preheated oven for about 25 minutes.
  12. Cool and Slice: Allow the bars to cool down completely before slicing into them.

Notes

For a more decadent treat, drizzle chocolate sauce over the top or sprinkle crushed graham crackers.
