A delicious and chewy take on traditional S’mores, these S’mores Cookie Bars are perfect for gatherings or indulgent moments.

Ingredients

  • 1 cup Unsalted butter, softened
  • 1 cup Brown sugar, packed
  • 1/2 cup Granulated sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 2 1/2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 cup Graham cracker crumbs
  • 1 cup Chocolate chips
  • 1 cup Mini marshmallows
  • to taste Extra chocolate chips and marshmallows for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish, or line it with parchment paper.
  2. Cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs, one at a time, and mix well. Then add the vanilla extract.
  4. Combine the all-purpose flour, baking soda, and salt in a separate bowl. Gradually blend this dry mixture into the wet ingredients until just combined.
  5. Fold in the graham cracker crumbs and chocolate chips.
  6. Stir in the mini marshmallows, ensuring an even distribution.
  7. Transfer the mixture to the prepared baking dish, pressing it down gently.
  8. Bake for about 25 minutes, or until the edges are golden and a toothpick comes out mostly clean.
  9. Garnish with extra chocolate chips and marshmallows immediately after removing from the oven.
  10. Cool in the pan for at least 10-15 minutes before slicing into squares.

Notes

Store in an airtight container at room temperature for up to 5 days, or refrigerate for longer shelf life.
