Warm cookies that encapsulate the flavors of classic campfire s’mores with crispy edges and a soft, chewy center.

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup graham cracker crumbs
  • 1 cup chocolate chips
  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract.
  4. Whisk together the flour, baking soda, and salt.
  5. Gradually add the dry mixture to the creamed mixture, incorporating until just combined.
  6. Mix in the graham cracker crumbs, chocolate chips, and mini marshmallows.
  7. Drop rounded tablespoons of dough onto ungreased baking sheets.
  8. Bake for 10-12 minutes, or until lightly golden.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring to wire racks.

Notes

For thicker cookies, chill the dough for about 30 minutes before baking.
