A delightful cake with layers of fluffy sponge and creamy Bavarian cream, topped with coconut and white chocolate.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 ½ cups sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 4 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup Bavarian cream (store-bought or homemade)
  • 1 cup shredded coconut
  • 4 ounces white chocolate, grated
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then mix in the vanilla.
  4. Combine flour and baking powder in a separate bowl. Gradually add to the creamed mixture, alternating with the milk until just combined.
  5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  7. Once cooled, place one layer of cake on a serving platter. Spread Bavarian cream on top, then place the second cake layer on top.
  8. Whip the heavy cream to stiff peaks and frost the top and sides of the cake.
  9. Top with shredded coconut and sprinkle grated white chocolate over the top.
  10. Dust with powdered sugar if desired and serve.

Notes

Allow cakes to cool completely to prevent melting the frosting. Consider adding layers of fresh fruit for a fruity twist.
