Soft Caramel Pecan Clusters

Delicious clusters of soft caramel enveloping toasted pecans, ideal for holidays or special occasions.

Ingredients

  • 1 cup pecan halves
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Toast the pecans in a dry skillet over medium heat for 3-4 minutes until fragrant. Remove and set aside.
  2. Melt the butter in a saucepan over medium heat. Add sugar, cream, and salt. Bring to a boil while stirring constantly.
  3. Continue boiling until the mixture reaches a soft ball stage (234°F to 240°F).
  4. Remove from heat and stir in the vanilla extract. Allow to cool for a couple of minutes.
  5. Fold in the toasted pecans until each nut is coated in caramel.
  6. Drop spoonfuls of the mixture onto a parchment-lined baking sheet, spacing them out.
  7. Let cool completely until set.

Notes

Make sure to keep stirring the sugar and cream mixture to prevent burning. If clusters are too sticky, dust lightly with powdered sugar.
