  • 1 packet active dry yeast
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup baking soda
  • 1 egg, beaten
  • Coarse sea salt, for sprinkling

Instructions

  1. Activate the yeast: In a large bowl, combine warm water, yeast, and sugar. Let sit for about 5 minutes until frothy.
  2. Mix the dough: Add flour and salt to the yeast mixture and mix until the dough forms.
  3. Knead to perfection: Knead the dough on a floured surface for about 5-7 minutes until smooth.
  4. Let it rise: Place in a greased bowl, cover, and let rise for about 1 hour.
  5. Preheat the oven: Preheat the oven to 450°F (230°C).
  6. Prepare the baking soda bath: In a large pot, bring 10 cups of water and the baking soda to a boil.
  7. Shape the pretzel bites: Meanwhile, divide the dough into small pieces and shape each piece into a bite-sized pretzel.
  8. Boil the pretzel bites: Boil the pretzel bites in the baking soda water for 30 seconds each, then remove and place on a baking sheet lined with parchment paper.
  9. Egg wash and salt: Brush each pretzel bite with beaten egg and sprinkle with coarse sea salt.
  10. Bake to golden brown: Bake for 12-15 minutes until golden brown.
  11. Cool and serve: Let cool slightly and serve warm.
