A delightful Sour Cream Coffee Cake that is fluffy, sweet, and subtly tangy, perfect for brunch or an afternoon snack.

Ingredients

  • 1 cup sour cream
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (optional)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish to prepare for the batter.
  2. Creaming together the softened butter and sugar until the mixture is smooth and fluffy.
  3. Add the eggs to the creamed mixture one at a time, beating well after each addition. Stir in the sour cream and vanilla extract.
  4. Combine the flour, baking powder, baking soda, and salt in a separate bowl. Gradually stir this dry mixture into the creamed mixture until just combined.
  5. Pour half of the batter into the prepared baking dish. Sprinkle half of the chopped nuts and half of the cinnamon on top.
  6. Cover the nut mixture with the remaining batter. Add the remaining nuts and more cinnamon on top if desired.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the pan before serving.

Notes

Serve plain or with whipped cream or vanilla ice cream. Pairs well with coffee or tea.
