A classic Southern dessert that combines creamy pudding, ripe bananas, and crunchy vanilla wafers, evoking warm memories of childhood.

Ingredients

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3 large egg yolks, beaten
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, sliced
  • 1 box vanilla wafers
  • Whipped cream (for topping)

Instructions

  1. Combine the whole milk, granulated sugar, all-purpose flour, and salt in a saucepan. Cook over medium heat, stirring constantly until it thickens and coats the back of a spoon.
  2. Slowly add a bit of the hot mixture to the beaten egg yolks, whisking to temper them. Return the mixture to the saucepan and cook for an additional 2-3 minutes, stirring until pudding-like consistency forms.
  3. Stir in the vanilla extract and let the mixture cool slightly off the heat.
  4. Layer in a large serving dish starting with vanilla wafers, followed by a layer of banana slices, and then pour on the pudding. Repeat layers until all ingredients are used, finishing with pudding on top.
  5. Cover and chill in the refrigerator for at least 2 hours.
  6. Crown your pudding with whipped cream before serving.

Notes

For best flavor, serve within the first few days. Store leftovers covered in the refrigerator for up to 3 days.
