Ingredients

  • 1 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 cups milk
  • 4 large egg yolks, beaten
  • 1 teaspoon vanilla extract
  • 2 large bananas, sliced
  • 1 box vanilla wafers
  • Whipped cream (for topping)

Instructions

  1. Combine sugar, flour, and salt in a saucepan.
  2. Whisk in the milk until the mixture is smooth.
  3. Heat over medium heat, stirring constantly until thickened and bubbly.
  4. Temper the egg yolks with a small amount of the hot mixture, then return to the saucepan.
  5. Add the vanilla and stir to combine.
  6. Layer the vanilla wafers, banana slices, and warm pudding mixture in a serving dish.
  7. Repeat the layers, finishing with pudding on top.
  8. Chill for at least 4 hours or overnight before serving, topped with whipped cream.

Notes

Use fresh ripe bananas for the best flavor. For a twist, consider adding a splash of rum or pairing with fresh berries.
