Southern Breakfast Enchiladas with Sausage Gravy

This dish combines hearty flavors of sausage and creamy gravy wrapped in warm tortillas, a perfect Southern breakfast!

Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon paprika
  • 8 large flour tortillas
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon ground sage
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon thyme
  • 1 tablespoon hot sauce

Instructions

  1. Heat the butter and olive oil over medium heat in a large skillet.
  2. Add the diced onion and sauté for 4-5 minutes until it softens.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the breakfast sausage, breaking it up as it cooks for 8-10 minutes until browned.
  5. Sprinkle the flour over the mixture and stir to combine.
  6. Gradually pour in the milk while stirring constantly to prevent lumps.
  7. Add the salt, black pepper, cayenne, paprika, sage, garlic powder, onion powder, and thyme.
  8. Let the mixture simmer for 5-7 minutes until it thickens.
  9. Preheat your oven to 375°F (190°C).
  10. Lightly grease a 9×13-inch baking dish.
  11. Spoon 2-3 tablespoons of the sausage gravy onto each tortilla, sprinkle with cheeses.
  12. Roll each tortilla tightly and place them seam-side down in the baking dish.
  13. Pour the remaining gravy over the tortillas and top with remaining cheeses.
  14. Bake for 20-25 minutes until cheese is melted and bubbly.
  15. Remove from oven, let cool slightly, and sprinkle with fresh parsley.
  16. Drizzle hot sauce on top before serving.

Notes

For added flavor, make the sausage gravy a day ahead. Customize with veggies or different proteins as desired.
