Delightful bites of cornbread made even better with sweet honey butter, perfect for sharing at any gathering.

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/4 cup honey
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a muffin tin.
  2. Combine the cornmeal, flour, sugar, baking powder, and salt in a large bowl.
  3. Whisk together the milk, vegetable oil, egg, honey, and melted butter in another bowl.
  4. Fold the wet ingredients into the dry, stirring until just combined.
  5. Pour the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes, or until a toothpick comes out clean.
  7. Cool slightly before serving with honey butter.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat at 350°F for 5-7 minutes.
