Celebrate summer’s bounty with a creamy, cheesy Southern Tomato Pie filled with ripe tomatoes and fresh basil, encased in a golden, flaky crust.

  • 23 ripe tomatoes, sliced
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1 pie crust (store-bought or homemade)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pre-bake the pie crust in a pie dish for 10 minutes.
  3. Layer the sliced tomatoes in the crust, seasoning with salt and pepper.
  4. In a bowl, whisk together mayonnaise, cheddar, Parmesan, and basil.
  5. Spread the cheese mixture over the tomatoes evenly.
