  • 2 cooked chicken breasts, shredded
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 cup shredded lettuce
  • 1/2 cup salsa
  • 4 large flour tortillas
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine shredded chicken, black beans, corn, bell pepper, and salsa; mix well. Season with salt and pepper to taste.
  2. Lay out the tortillas on a clean surface and evenly distribute the chicken mixture among them.
  3. Top each tortilla with slices of creamy avocado and a handful of fresh shredded lettuce.
  4. Sprinkle shredded cheese on top of the filled tortillas for that melty goodness.
