These colorful wraps are packed with tender chicken, black beans, crunch bell peppers, and creamy avocado, all wrapped in a whole wheat tortilla. Perfect for a quick and delicious meal!

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 cup fresh spinach or lettuce
  • 1/2 cup salsa
  • 4 large whole wheat tortillas
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Combine the shredded chicken, black beans, corn, diced bell pepper, cumin, salt, and pepper in a large bowl. Mix well.
  2. Prepare the tortillas by laying them on a flat surface and slightly warming them for better pliability.
  3. Spread a spoonful of salsa on each tortilla.
  4. Fill each tortilla with the chicken mixture, adding a layer of avocado slices and fresh spinach on top.
  5. Roll up each tortilla tightly and ensure the ends are tucked in.
  6. Cut in half and serve with extra salsa on the side.
