Spaghetti Carbonara

A comforting Italian dish with a creamy sauce, crispy pancetta, and tender pasta.

Ingredients

  • 400g spaghetti
  • 4 large egg yolks
  • 100g grated Parmesan cheese
  • 150g pancetta or guanciale, diced
  • Freshly ground black pepper
  • Salt
  • 2 cloves of garlic (optional)

Instructions

  1. Cook spaghetti in salted boiling water until tender but al dente, about 8-10 minutes.
  2. Whisk together the egg yolks and grated Parmesan cheese in a separate bowl until smooth.
  3. Cook the diced pancetta in a large pan over medium heat until crispy and golden, about 5-7 minutes. If using, add garlic during the last couple of minutes.
  4. Drain the spaghetti, reserving a cup of pasta water, and add it to the pan with the crispy pancetta. Toss together vigorously.
  5. Remove the pan from heat and stir in the egg and cheese mixture, adding reserved pasta water to achieve desired consistency.
  6. Season with freshly cracked black pepper and serve immediately, garnished with extra Parmesan if desired.

Notes

For best flavor, select high-quality pancetta or guanciale. Don’t skip the pasta water for creaminess.
