Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 can (14 oz) crushed tomatoes
  • 4 eggs
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the diced onion and sauté until translucent.
  3. Stir in the minced garlic and red pepper flakes, cooking for another minute.
  4. Pour in the crushed tomatoes and season with salt and pepper, simmer for about 5 minutes.
  5. Create small wells in the sauce and crack an egg into each.
  6. Cover and let the eggs cook to your liking.
  7. Garnish with freshly chopped parsley and serve warm.

Notes
