A delightful Spinach and Feta Quiche perfect for breakfast, brunch, or dinner, featuring a creamy filling and a flaky crust.

  • 1 pie crust
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 4 eggs
  • 1 cup heavy cream or milk
  • 1/2 cup onion, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the chopped onion in a skillet over medium heat until translucent and fragrant, about 3-4 minutes.
  3. Wilt the spinach by adding it to the skillet and cooking until wilted, about 2-3 minutes.
  4. Whisk together the eggs, heavy cream or milk, salt, pepper, and nutmeg in a mixing bowl.
  5. Assemble the pie crust in a dish, then distribute the spinach and onion mixture evenly and sprinkle with feta cheese.
  6. Combine and pour the egg mixture over the filling.
  7. Bake in the preheated oven for 35-40 minutes until set and golden.
  8. Cool for a few minutes before slicing and serving.
