Delightful pinwheels made with flaky puff pastry, savory spinach, and creamy feta cheese, perfect for snacks or appetizers.

Ingredients

  • 1 sheet frozen puff pastry
  • 1 cup frozen spinach, thawed and squeezed dry
  • ½ cup feta cheese, crumbled
  • ½ cup mozzarella cheese, grated
  • 2 tablespoons green onions, chopped
  • 1 tablespoon olive oil
  • 1 egg (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry sheet on a lightly floured surface.
  3. In a bowl, combine the spinach, feta, mozzarella, and green onions. Season with salt and pepper.
  4. Brush the pastry with egg wash evenly.
  5. Spread the filling over the egg-washed puff pastry.
  6. Roll the pastry tightly to form a log.
  7. Slice the log into approximately 1-inch thick pinwheels.
  8. Place the pinwheels on a baking sheet lined with parchment paper.
  9. Brush the tops of the pinwheels with additional egg wash.
  10. Bake for 15 to 20 minutes, or until golden and puffed up.

Notes

For best results, squeeze out excess moisture from spinach and roll tightly for neat pinwheels.
