A festive and hearty breakfast dish featuring sweet potatoes, crispy bacon, and fluffy eggs, perfect for celebrating St. Patrick’s Day.

Ingredients

  • 1 large sweet potato
  • 2 eggs
  • 4 strips of bacon
  • 1/2 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Olive oil or cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash your sweet potato, poke holes with a fork, rub with olive oil, sprinkle with salt, and place on a baking sheet. Bake for 45 minutes or until tender.
  3. Cook the bacon in a skillet until crispy, then drain on paper towels and chop into pieces.
  4. Fry the eggs to your desired doneness in the same skillet.
  5. Cut open the baked sweet potato and fluff the inside with a fork.
  6. Layer the cooked bacon, fried eggs, and cheese inside the sweet potato.
  7. Season with salt and pepper, and serve warm.
