Delicious, fluffy egg bites packed with veggies and cheese, inspired by Starbucks, perfect for breakfast or a snack.

Ingredients

  • 6 large Eggs
  • 1 cup Cheese (Cheddar or Gruyere)
  • 1 cup Spinach, chopped
  • 1/2 cup Red bell pepper, diced
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • Cooking spray or oil

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Grease a muffin tin with cooking spray or oil.
  3. Whisk together the eggs, salt, and pepper in a mixing bowl.
  4. Stir in cheese, spinach, and red bell pepper.
  5. Fill the muffin tin with the egg mixture, filling each cup about 2/3 full.
  6. Bake for 25-30 minutes, or until set and lightly browned.
  7. Allow to cool slightly before removing from the tin and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to a month.
