A delightful pasta dish combining sweet chili and BBQ sauce for a comforting experience.

Ingredients

  • 1 lb cooked chicken (shredded or diced)
  • 1 cup sweet chili sauce
  • 1/2 cup BBQ sauce
  • 8 oz spaghetti (or pasta of choice)
  • 1 cup diced bell peppers
  • 1/2 cup diced red onion
  • 2 cloves garlic (minced)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced red onion and bell peppers; cook for 3-4 minutes until softened.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Add cooked chicken, sweet chili sauce, and BBQ sauce; stir well.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add uncooked pasta, ensuring it’s submerged in the sauce; cover the pot.
  7. Cook until the pasta is al dente (about 10-12 minutes), stirring occasionally.
  8. Season with salt and pepper to taste before serving.

Notes

Use leftover rotisserie chicken for a quick shortcut. Adjust the heat level by adding sliced jalapeños or using spicy BBQ sauce.
