Delightful strawberry brownies that combine the ease of a box mix with the freshness of real strawberries, topped with a luscious cream cheese frosting.

Ingredients

  • 15.25 oz Strawberry Cake Mix (Pillsbury)
  • 2 large eggs
  • ½ cup unsalted butter (1 stick, melted)
  • 1 tsp vanilla extract
  • 2 Tbsp strawberry preserves
  • 1 Tbsp cream cheese (softened)
  • ¾ cup powdered sugar
  • ⅛ tsp salt
  • 1 tbsp milk
  • 2 Tbsp Freeze dried strawberries (chopped into small pieces)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Line a 9×9” pan with parchment paper and spray it with nonstick spray.
  2. Combine the strawberry cake mix, 2 eggs, melted butter, and vanilla extract in a large mixing bowl. Mix until well incorporated.
  3. Spread the brownie batter into the prepared pan evenly.
  4. Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool the brownies in the pan before transferring them to a wire rack to cool completely.
  6. Prepare the frosting by whisking together the strawberry preserves and cream cheese until well blended.
  7. Add powdered sugar, salt, and milk to the cream cheese mixture and whisk until smooth.
  8. Spread the frosting over the cooled brownies with a rubber spatula.
  9. Garnish with freeze-dried strawberries if desired.
  10. Slice into squares, serve, and enjoy!

Notes

Store in an airtight container at room temperature for about 3 days or in the fridge for up to a week. Can be frozen for up to a month.
