A cloud-like, sweet frosting bursting with the freshness of strawberries, perfect for topping cakes and cupcakes.

Ingredients

  • 1 cup unsalted butter, room temperature
  • 4 cups powdered sugar, sifted
  • 1/4 cup strawberry puree
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 tablespoon heavy cream

Instructions

  1. Cream the butter by beating it on medium speed until creamy, about 2 minutes.
  2. Incorporate the sifted powdered sugar gradually on low speed until combined.
  3. Add the strawberry puree, vanilla extract, and a pinch of salt while increasing the mixer speed to medium.
  4. Whip for 3 to 4 minutes until the mixture is light and fluffy, scraping down the bowl as needed.
  5. Adjust the consistency if necessary by adding heavy cream and whip for an additional minute until smooth.
  6. Frost immediately on cakes or cupcakes, or chill briefly and re-whip before using.

Notes

Store leftover frosting in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months. Re-whip before use.
