A delightful fusion of strawberry shortcake and cheesecake in cookie form, perfect for any gathering.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped fresh strawberries
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Mix together the flour, baking soda, and salt in another bowl.
  5. Add the dry mixture to the wet mixture, stirring until just combined.
  6. Fold in the chopped fresh strawberries.
  7. Combine the softened cream cheese and powdered sugar until smooth for the filling.
  8. Drop spoonfuls of cookie dough onto a lined baking sheet.
  9. Use your thumb to create an indentation in each cookie dough spoonful.
  10. Fill the indentation with cheesecake filling.
  11. Bake for 12-15 minutes, until the edges are lightly golden.
  12. Cool the cookies on a wire rack.
