Delightful Strawberry Cheesecake Protein Balls that provide a sweet craving satisfaction along with a protein boost, perfect for a healthy snack.

  • ¾ cup oat flour (or finely ground oats)
  • 4 oz cream cheese, softened
  • 3 tbsp Greek yogurt (plain or vanilla)
  • 2 tbsp honey or maple syrup
  • ¼ cup freeze-dried strawberries, crushed
  • ½ tsp vanilla extract
  • Pinch of salt
  • Pink/red sprinkles or extra crushed strawberries (optional, for coating)

Instructions

  1. Combine the Dry Ingredients: In a bowl, combine the protein powder, oat flour, crushed freeze-dried strawberries, and a pinch of salt.
  2. Add in the creamy ingredients: Add the softened cream cheese, Greek yogurt, honey (or maple syrup), and vanilla extract.
  3. Stir until smooth: Using a spatula or wooden spoon, stir until a thick, dough-like consistency forms.
  4. Scoop and Roll: Scoop out small portions of the dough and roll them into bite-sized balls.
  5. Add some sparkle: Roll the balls in pink or red sprinkles or extra crushed strawberries if desired.
  6. Chill to firm up: Place the rolled balls in the refrigerator for at least 30 minutes.
