Deliciously soft and fluffy muffins bursting with juicy strawberries and creamy layers of cream cheese.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the flour, sugar, baking powder, and salt together in a bowl.
  3. Cream together the softened cream cheese, melted butter, eggs, milk, and vanilla until smooth.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Fold in the chopped strawberries gently.
  6. Divide the batter among the muffin cups, filling each about 2/3 full, and bake for 20-25 minutes.

Notes

Serve with whipped cream or butter. Store in an airtight container for up to three days or freeze for up to three months.
